Sweet Tooth?

Holy Cow! Cake

Cake

Vegetable oil spray for misting the pan
1 package (18.25 ounces) plain devil's food cake mix
1 1/3 cups water
1/2 cup vegetable oil, such as canola, corn, safflower, soybean, or sunflower
3 large eggs

Topping

1 jar (8 ounces) caramel topping
1 can (14 ounces) sweetened condensed milk
4 Butterfinger candy bars (2.1 ounces each), crushed
1 container (12 ounces) frozen whipped topping, thawed
1 package (8 ounces) cream cheese, at room temperature

1. Place a rack in the center of the oven and preheat the oven to 350 degrees F. Lightly mist a 13- by 9-inch baking pan with vegetable oil spray. Set the pan aside.

2. Place the cake mix, water, oil, and eggs in a large mixing bowl. Blend with an electric mixer on low speed for 1 minute. Stop the machine and scrape down the sides of the bowl with a rubber spatula. Increase the mixer speed to medium and beat 2 minutes more, scraping the sides down again if needed. The batter should look thick and well blended. Pour the batter into the prepared pan, smoothing out the top with the rubber spatula. Place the pan in the oven.

3. Bake the cake until it springs back when lightly pressed with your finger and just starts to pull away from the sides of the pan, 35 to 38 minutes. Remove the pan from the oven and place it on a wire rack. Immediately poke holes in the top of the cake with a drinking straw or chopstick.

4. Prepare the topping. Place the caramel topping and sweetened condensed milk in a small bowl and stir to combine. Spoon this mixture over the warm cake so that it can seep down into the holes. Measure out half of the crushed candy bars and sprinkle the pieces over the cake.

5. Place the whipped topping and cream cheese in a large mixing bowl and blend with an electric mixer on low speed until smooth and combined, 1 minute. Spread the mixture over the top of the candy. Sprinkle the remaining candy pieces on top.

6. Place the pan, uncovered, in the refrigerator to chill the cake for about 20 minutes before cutting it into squares and serving.

Finally Friday

Logan is 7. The questions are non-stop with him. On the way to school today, he must have asked 50 questions. "Does my cat think I am his best friend, or does he think I am his dad?", "Will you be alive when I get married", "How old will I be when Kyler gets married?", "Will Kyler be an uncle when I have kids one day?". I could go on for a while! I try to answer them all without chuckling because he really is serious. He is growing up before my eyes.

LOL!

This weekend

We started off by having to work on Logans River Otter project. Basically, we had to research an Ohio animal and make a visual project. I now know more than anyone needs to know about River otters. Did you know they can hold their breath for 8 minutes?! haha.

Logan keeps begging me to let him get a mohawk. I told him no way. On the way to get his haircut Saturday, he must have asked me 6 times. " Mom , why cant I get a mohawk." During the school year... I just cant force myself to say yes. Summer=Mohawk for Logan.

Kyler's favorite past time now is to grab a handful of cat food and hand it out to each one of us in the house. We each get a pile. Then, he wants it all back. Then, he hands it out again. Cat food everywhere. Thankfully our cats follow behind him and clean the mess up.

I wanna Rock!!

We bought our tickets today for Rock on the Range. It's a 2 day concert in Columbus. It's so hard to buy tickets for something we cannot enjoy until May!

Here is my favorite dessert recipe: Mountain Dew Apple Dumplings. My mouth is already watering and I havent made them today yet.

Ingredients

2 (8-count) cans refrigerated crescent rolls
3 to 4 tart apples, peeled and slice into 16 wedges
1/2 cup butter, melted
1-1/2 cups sugar
1 teaspoon cinnamon
1 (12-ounce) can Mountain Dew soda
Directions: Heat oven to 350°F. Spray 13×9-inch dish with cooking spray. Separate dough into 16 triangles. Place apple quarter on shortest side of each triangle. Roll up each, starting at shortest side, and rolling to opposite point. Place point side down in prepared pan.
In small bowl, stir together melted butter, sugar and cinnamon; spoon evenly over crescent-wrapped apples. Pour Mountain Dew over all.
Bake at 350°F. for 35 to 45 minutes or until apples are tender. Serve warm with sauce. Top with whipped cream or vanilla ice cream if desired. Makes 16 dumplings.

More Snow

I cant stop laughing at Barney right now. Kyler LOVES watching that show. Then, the songs get stuck in my head all day. I swore my kids would never watch the purple dinosaur, but they both have loved him.......... "I'm a happy helper", " Riding in the car, I buckle my belt" These are the songs I must deal with! haha

Morning

For those of you who know me then you know I am a vegetarian. I stop at McDonalds today for a bagel with cheese. Thats it, just cheese. Get to work and the darn bagel has egg and bacon on it! What a waste of money..... of course I cant leave work and go take it back now. I actually think that my orders would be very simple to handle, WRONG! There are so many times when I order something without meat and VOILA, there it is!

By the way, this year, will be the 20 year mark of me being a vegetarian!

Concert!

Rock on the Range has the best line up this year. Tickets go on sale Saturday. Rockontherange.com

I went last year and it was so much fun and the price is great for 2 days full of bands.

Chicago

We had such a great time last weekend. We left Friday after I got home from work. Its so funny how mant gadgets we have in our car. We have our Sirius radio, GPS, and two DVD players in the back for the boys. Oh yea, and our police scanner. Logan always has his Nintendo DS in the car. I laugh when I think about all the technology and how plugged in the world is.
We picked up my sister Cori in South Bend, Indiana. I was so excited she was coming with us. I dont see my family nearly as much as I would like.
Our hotel was right above Chicago Sun Times. We had a great view from our room. Saturday was busy with the Science and Industry Museum, Shedd Aquarium and the Planetarium. Then, we went to Navy Pier and rode the ferris wheel and ate dinner. Oh yea, and had ice cream! Sunday we went to the Sears Tower. My ears were popping on the elevator. Overall, the kids had a great time. Logan is already talking about the next time we go. He really wanted to go to Field Museum but we didnt have enough time.
